These rustic savoury vanilla cookies with ajvar, fragranced with olive and truffle paste and enriched with parmesan, come to us from the blog Coolinarija by Nataša Vitezović. These are savoury cookies you just can’t resist, and which you won’t stop eating until your plate is empty, so we strongly recommend them for celebrations as well as for any time you want the warmth of real home cooking.
Mix the flour, salt and grated parmesan and add room temperature butter, olive oil, the olive and truffle paste and egg. Mix into a soft and smooth dough. Then wrap in film and leave in the fridge for half an hour.
Roll out the dough to a thickness of about 3 mm, then using a round cutter or glass, cut out cookies from it and place in a baking tin covered in parchment paper. Knead together the remaining dough and use it in the same way.
Bake the savoury cookies in a preheated oven at 180°C until the edges start becoming crisp. Then remove the baked cookies carefully from the oven and allow to cool. Just before serving, put some ajvar on the cookies.
